However, I think you could do the same thing as you did this time! Relatively young leaves might have a stronger scent that would work well. If you give it a try, please let me know how it goes.

This is interesting. We have a Tahitian lime tree at home here in Melbourne, Australia, & my father has a Lisbon lemon & Italian grapefruit. So I will try your recipe with those leaves. I wasn’t aware that Japanese use much citrus, preferring gentler, subtle flavours.
I’d like to add that of all the food in the world, we think that traditional British, European & Japanese cuisines are by far the best.
I haven’t tried this with other citrus fruits yet, but I think you could make it the same way using citrus leaves! The flavor might be a little different, but please give it a try! ✨
